Well, it's that time on the farm that we cycle out our laying hens, this gives you an excellent opportunity to purchase some superb stock for stewing. Because we believe in the waste not, want not! What is the difference between our broilers and Stewing birds (layers) as far as cooking is concerned, both are full of flavor, rich in mineral, vitamins and omegas, but broilers take less time to prepare, but Stewing birds are exceptional for longer cooking meals like stews, soups, chicken and dumplings, Bbq pulled chicken sandwiches, just remember it won't be fork tender for hours, so they don't make good roasting chickens do to the length of time you need to cook them. They make one of the healthiest bone broths ~ think of them like a fine wine they get better with age chuck full of nutrients. We cycle every two years so when we are sold out we won't restock for 2 years.
